Cooking Instant Pot Pizza Tips

  • My failsafe method of avoiding a soggy pizza crust is to prick the dough with a fork and then bake it plain for 5 mins before adding any toppings (especially if you don’t have a pizza stone).
  • However, you can add your toppings directly to the rolled dough if you prefer, but may end up with a slightly soggier pizza crust.
  • Don’t over-top your pizza, and especially don’t over do it with the tomato sauce. Less is more when it comes to pizza toppings.
  • If using freshly torn herbs, it is best to add those after cooking for maximum flavor.

Storing The Pizza Dough

The dough will last in the fridge for 24 hrs. Wrap your individual portions in plastic cling film.

How To Freeze Pizza Dough

You can easily scale up the recipe and freeze till needed. Wrapped well, you can store the pizza dough in the freezer for up to 3 months. Here’s how to prepare it for freezing:

  • Split the pizza dough into the right size for cooking and shape into balls.
  • Place individual dough balls into separate freezer bags, remove all the air and seal tightly.
  • Label and freeze for up to 3 months.
  • To defrost, simply take out the dough and leave to defrost for a couple of hours.Chili Herb Instant Pot Pizza Dough | Recipes From A Pantry (8)

Why won't my pizza dough stay stretched? ›

Under-proofed pizza dough is hard to stretch and dense. An over-proofed dough will stretch too thin and won't spring up when you put it in the oven. Warm-up your dough: Cold dough is hard to stretch and more prone to tearing. Let your dough warm up to at least room temperature before stretching for best results.

What happens if you leave pizza dough to rise too long? ›

Pizza dough that has been left to rise for too long, or has been over-proofed, can potentially collapse. The gluten becomes overly relaxed, and the end product will be gummy or crumbly instead of crisp and fluffy.

Is pizza dough better the longer you let it rise? ›

The general rule is to let pizza dough rise until it has doubled in size, which could take anywhere between 1-1.5 hours. This will give the yeast time to activate and create a light, airy texture in the crust. However, I personally prefer cold-fermenting the dough for 48 hours for extra flavor.

How do you proof store bought pizza dough? ›

Take it out of the refrigerator, remove from the bag, form into a ball, and place in a lightly oiled large bowl. Bring dough to room temperature, which will take about thirty minutes and then proof for an hour or so until doubled in volume. Punch down the dough by placing your fist in the center of the dough.

What order do you put ingredients on homemade pizza? ›

You've got your dough as the foundation. Then your sauce. The cheese is the next solid layer. Then your toppings (after all, they're called top-pings and not bottom-ings), and then finally your garnishes like basil, pepper, fresh mozzarella, etc, after the pizza is cooked.

What temperature to cook homemade pizza? ›

The best oven temperature for pizza is between 450 and 500 degrees F (250 to 260 degrees C). Pizza ovens cook at temperatures between 800 and 900 degrees F. You can't get that hot in your home oven, but the higher you can go, the better. Place a pizza stone on a lower oven rack.

How do you make pizza dough rise better? ›

Pizza dough loves warmth, so if you can find a way to add some extra heat, your dough will rise faster. One way to do this is to preheat your oven to the lowest setting (usually around 200 degrees Fahrenheit) and then turn it off. Place your pizza dough in the warm oven for 10-15 minutes until it begins to rise.

What does adding vinegar to pizza dough do? ›

The acidic properties of vinegar inhibit gluten, some will say. This theory proposes that once the water and flour are combined, gluten starts forming, causing the dough to grow tough. Adding an acid, the theory goes, stops the gluten in its tracks and rescues the crust from toughness.

What makes pizza dough more crispy? ›

The secret to a more crispy pizza crust is probably not what you think. You might assume that less water will result in a crispier crust. But you'd be wrong. To achieve a more crispy crust, you'll need to add more water to the dough formula.
