All you need on your Thanksgiving and Christmas table is this divine, fluffy homemade sweet bread loaded with tangy cranberries. I don’t think it lasts for more than 20 minutes after it comes out of the oven, so plan accordingly.

Super easy to make, all you need are: two bowls, a whisk and a spatula to fold everything together. Bake for 1 hour and voila: the perfect holiday cranberry loaf!

Cranberry Bread Recipe Tips + FAQ

  • The Batter – to ensure a moist and fluffy bread without the use of orange juice I use Italian ricotta cheese + olive oil. It’s the best combination when making sweet breads and always yileds marvelous results even if you are not an experienced baker. Remember this pumpkin bread?
  • Do Not Overmix – excessive mixing of the dough makes the bread tough, so make sure to FOLD your wet and dry ingredients just until combined for the best results.
  • The Streusel – it’s simple, it’s quick but it takes your bread to the next level. There’s really no need for a glaze at all unless you insist, in which case I recommend a festive white chocolate glaze topped with sliced almonds.
  • Can you use dried cranberries instead of fresh? – Not recommended in this recipe, fresh is best.
  • How do you keep cranberries from floating on bread? – Add the cranberries to the bowl with the dry ingredients and give them a quick toss before folding into the wet ingredients.
  • Storage – Allow the loaf to cool off completely before wrapping it in parchment paper and/or aluminum foil. Store on the kitchen counter or in the pantry for a few days. Individual slices can be refrigerated or frozen in sandwich bags or wrapped in plastic wrap for later use. Pop in the toaster oven to reheat.

Recipe Variations:

  • Replace the streusel topping with a luscious white chocolate glaze instead.
  • Add white chocolate chips, candied orange peel or nuts to the batter.
  • Bake into little muffins instead of a loaf.
  • Go over the top and drizzle with a grand marnier or orange glaze on top of the streusel. Exact measurements included in the recipe card below.

Instructions

  • Preheat your oven to 350 “F

  • In a mixing bowl whisk together the eggs, olive oil, vanilla, sugar, sea salt and ricotta cheese. Set aside.

  • In a separate bowl whisk together the flour, baking powder and baking soda. Add it to the bowl with the wet mixture. Add the cranberries and using a spatula gently fold everything together.

  • Layer a loaf pan with baking wax paper and pour in the dough.

Quickly make the streusel topping by combining the sugar and flour together in a small bowl. Using a cheese grater, grate the cold butter on top and mix in using your fingertips, just until mixture looks like wet sand. Move quickly so the butter doesn’t melt. Sprinkle over the cranberry bread dough.

  • Bake in the preheated oven for 50 minutes to 1 hour, until a toothpick inserted in the center comes out almost clean.

  • Grand Marnier Glaze:

    Whisk together 1 c powder sugar + 1/4 c grand marnier.

    Orange Glaze:

Whisk 1 c powder sugar + 3 tbsp orange juice + 1 tbsp lemon juice. Combine with the zest from 1 orange and drizzle over the cranberry bread after it has cooled off completely.

  1. I’ve made this twice now and it does not disappoint! I prefer the Grand Marnier glaze over the streusel, but it’s a great bread either way!

    1. Thank you so much Ellie Actually I have 2 different pans I make this in, the one in the video is a 9×4 Italian loaf pan. It isn’t a fussy bread, so you can even make it in a bundt cake pan if you want, just check the cake earlier to make sure you don’t over bake it. Let me know how it goes ~ Florentina

FAQs

Should you pre cook cranberries before baking? ›

Do you need to cook fresh cranberries before baking? While cranberries should not be eaten as is (they are unpleasantly tart), they do not need to be cooked before they are used in baked goods.

Why does my cranberry bread fall apart? ›

If your cranberry bread is crumbly, it could be because there isn't enough fat or eggs in the batter, or the bread was overbaked. If the recipe you're using provides gram measurements (like mine), then I would highly recommend using them for the most accurate results.

How long does cranberry bread last in the fridge? ›

Cool thoroughly, and serve. (Store leftover cranberry-orange bread wrapped in foil or plastic wrap in the refrigerator for up to 2 weeks.)

What kind of cranberries do you use for baking? ›

Fresh cranberries are tart. The only baking cranberries I know of are the dried and sweetened ones. I've only used dried and soaked cranberries in baking, but I suppose you could use the fresh ones if you prefer a more tart taste. They are bigger than the dried ones so you want to make allowances for that.

Why should cranberries not be eaten raw? ›

Is it safe to eat cranberries raw? Cranberries are generally considered safe whether they are cooked or raw. However, because of their notoriously bitter, sharp taste, most people prefer not to eat them raw or unsweetened. This bitterness is due to the high tannin content of cranberries.

Should you soak fresh cranberries before baking? ›

There's really not much you need to do to prepare fresh cranberries for baking. I just soaked and rinsed my berries to wash them off and then folded them into my cranberry orange pound cake batter. Pro tip: toss your fresh cranberries with a little flour so they won't sink in the batter!

Why does my cranberry bread sink in the middle? ›

Why does my cranberry bread sink in the middle? If your bread sinks in the middle, the usual culprit is too much moisture in the bread, or the baking powder has expired. Always make sure to measure your ingredients and check for the freshness of the ingredients for the best results.

What happens if you leave egg out of bread? ›

Bread with no egg looked as normal as any other white loaf. It had puffed up evenly and had a nice crust colour and a soft texture. The interior was soft but quite tight. This could be made lighter by skipping the pre-shaping or folding steps making the dough looser.

Why does the crust fall off my homemade bread? ›

Bread expands as it bakes. This can cause it to open at the seam, if baked as a free form loaf. It can also create breaks in the top crust, as oven rise can increase volume by as much as 20%.

Why did my cranberry bread turn green? ›

Don't be worried about a greenish tint on the inside; it's caused by an interaction of the fresh cranberries and baking powder (acid and alkaline).

Can you use dried cranberries instead of fresh? ›

Can I substitute dried cranberries in recipes that call for fresh cranberries? Yes, dried cranberries work well in baked goods; however there is a ¼ cup difference in measurement. If a recipe calls for one cup of fresh or frozen cranberries, use ¾ cup of sweetened dried cranberries.

Can you use Craisins instead of cranberries in baking? ›

Yes, Craisins® Sweetened Dried Cranberries work well in baked goods; however, there is a 1/4 cup (60 mL) difference in measurement. If a recipe calls for one cup of fresh cranberries you should use 3/4 cup (175 mL) of Craisins®. Craisins® should not be used in cooked sauces.

Is it better to bake with fresh or frozen cranberries? ›

If cooking your berries into a pie filling, you may need to add additional thickening agents because frozen berries tend to release more liquid than fresh and will lead to a runnier consistency. For best results in your baking, don't defrost the berries before use but instead toss them in flour.

Are Craisins dried cranberries? ›

Dried cranberries may be marketed as craisins due to the similarity in appearance with raisins, although the word "Craisin" is a registered trademark of Ocean Spray. Craisins were introduced as part of a packaged cereal produced by Ralston Purina in 1989.

How do you soften cranberries for baking? ›

Put your dried fruit in a small bowl and cover with boiling water. Let it steep for 10 to 15 minutes, and then strain the fruit and discard the water. The fruit will be plumper, juicier, and softer. To give your fruit some extra flavor, swap the water for fruit juice or a liquor, like rum, bourbon, or brandy.
