Easy Chocolate Avocado Pudding Recipe (Paleo, Dairy-Free) (1)

Silky smooth, creamy and totally satisfying, this chocolate avocado pudding is one of my favorite easy dessert recipes. Made with wholesome ingredients that are rich in healthy fats, magnesiumand other nutrients, it’s so much more delicious (and nourishing) than the boxed stuff found on store shelves.

As you probably guessed by the title, fresh avocados are one of those ingredients. In addition to making the perfect EASY base for yummy, chocolatey pudding, they’re rich in folate, potassium, fiber, antioxidants and of course heart healthy fats. Chocolate is rich in antioxidants, too, plus magnesium and potassium.

If you’re skeptical about using avocados in dessert, I promise you that can’t taste them . . . pinky swear and everything. The only caveat is that they must. not. be. overripe – no brown spots or streaks. If you follow that guideline this chocolate pudding recipe is pretty much mistake-proof.

Just toss everything into a food processor and give it a whirl, and remember:

There is nothing better than a friend, unless it is a friend with chocolate.” – Linda Grayson

Optional Flavoring Ideas

Personally, I think the simple version of this recipe is the best, but if you want to change things up every once in awhile here are a couple of things I’ve tried that turned out well .

  • Peppermint extract – I used 1/4 tsp and it was just right, but depending on how strong your extract is you may want a little less or a little more. After you’ve made the pudding, I suggest adding in 1/8 teaspoon and blending for 30 seconds, then adding more in 1/8 teaspoon increments until the peppermint flavor reaches the intensity you prefer.
  • Mushroom coffee powder – When I add this lion’s mane and chaga coffee powder it adds a lovely mocha flavor. I usually add this one to taste to my bowl instead of the whole batch.

Ingredients

Instructions

  • Melt the chocolate using my easy or easier option. Easy option: Melt the the chocolate in a double boiler. If you don't have a double boiler, you can use a stainless steel bowl set inside a pan of simmering water. Even easier option: Place the chocolate chips in a small pot and place them on the stove over low heat until they're melted. Make sure to keep the heat low so they don't scorch.

  • Add the avocados, 2 tablespoons of the cocoa/cacao powder, coconut milk/water, 1 tablespoons of the maple syrup, vanilla, sea salt, melted chocolate, and any optional additions (like powdered mushroom coffee or peppermint extract) to the food processor.

  • Turn the food processor on for 30-45 seconds, then remove the lid and scrape down the sides of the bowl. Turn the food processor on for another minute or so – until it has a smooth, creamy texture. When the pudding is well-blended, taste it and add an additional tablespoon of maple syrup or cocoa/cacao powder if needed. (Blend for another 30 seconds if you add anything.)

  • Serve right away or refrigerate until chilled (about 30-60 minutes) and then serve. This chocolate pudding is best when eaten within one day.
