Not a vegetarian, but loved this anyways. Made as described except I replaced the eggplant with summer squash and baked all of them in a 375 convection oven.

I am a meat eater, so I was a little skeptical about this. But this is SO delicious and filling, too. I make my own hummus with chipotles in adobo and added some cool, crisp cucumber for a little contrast and crunch. I will definitely be adding this into my rotation!

I grilled some garlic cloves and chopped them with the other veggies, and I used olive oil spray on the veggies instead of olive oil, otherwise I followed the recipe. I served them with a tabouli salad -- yummy!

This was excellent! I think it would be good with grilled tomatoes also. I used half the amount of feta. The mix of hummus and grilled veggies was perfect. Will keep this as a year-round staple.

Wonderful flavor,very fast and easy. Great on a hot summer night. I added one sliced zucchini and two cubes of frozen garlic and used spicy hummus. I wish there were leftovers for tomorrow! Definitely will make again.

These were good - even my finicky teenager loved it (and she's not big on veggies). I used whole wheat tortillas. I also added some chopped fresh basil to the veggies while tossing in the oil just before assembly. I grilled the veggies on our Traeger BBQ using a grill basket for 10 minutes on each side at 425. Nice quick and easy weeknight meal.

I made this last night and it was delicious. Easy to make and the veggies were yummy and went well with the feta. I used a whole wheat wrap as that is what I had on hand. I was disappointed because when I went to put the hummus on I didn't have any. I will definately make this again with the addition of the hummus, but even without it was good. This is a nice recipe for a quick weeknight meal.

It's a keeper! Loved, loved, loved it & wouldn't change anything. Other than it's hot & we are running the air so I chose to grill the veggies in a pan on the upper rack of grill.

Made these for the first time today to take as a bagged lunch. Roasted the veggies in the oven the night before with cooking spray and a very small amount of olive oil. Assembled them the next morning as recipe stated but used low cab tortillas instead of the flat bread. Regular hummus but Mediterranean feta. My husband and I loved them, making them again tomorrow!

A solid veggie wrap that is delicious and filling. I like to cook up extra vegetables and keep in the fridge so I can quickly make a sandwich for lunch and use the "Flat Out" brand flatbread.

these were really good! very easy to prep & cook. I don't have grill pan and it's too hot (& too much trouble) to grill, so just put them in saute pan. Veggies get brown just as well. I didn't like the flatbread - too much of a wad of bread. Next time I used wheat tortillas - liked these much better. Easier to wrap and 50 less calories. You must have the feta. It rounds out the character. The second time, I added leftover roasted chicken to the pan (to warm it up) - worked great and perfect (easy) way to use up leftover chicken. Great for an easy weekend lunch, too. Also, I always salt my eggplant before I cook it (let it sit then dab off the liquid). Even if it sits for 15 min, it's better than not doing it.

This was wonderfully light and easy to prepare. I came home, cut up the veggies, added in some zucchini, put them in a bag with some Kraft fat free zesty italian dressing to marinate, then let it sit in the fridge while we went to the gym. My boyfriend was very concerned that he wasn't going to like it since it had "too many veggies". Threw the veggies on the grill, hummused up the flatbreads, snacked on some pita chips while we waited, and in about 10 minutes they were ready. My BF ate the whole wrap and said it was MUCH better than he anticipated. The feta cheese really adds a nice kick to it. Will make again.

This was a really good wrap. However I wish that I has stuck to the reguler hummus instead of the spicey I think that the spicey detracted from the grilled veggies.

Delicous wrap. I did add chopped ready cooked grilled chicken breast to a couple of them for those who must have meat. I didn't need the full 2 tablespoons of olive oil; probably used about 1 1/4 tablespoons.

Outstanding recipe! Fast and easy and full of flavor. I used the hummus from my favorite Mediterranean restaurant and it turned out great. "Flat Out" brand flatbread is super low in calories and fat.

My husband and I really enjoyed the filling, and these were so easy to make (thanks to the grill pan). I used Flatout Light Italian Flatbreads (the only kind my grocery store had) and honestly, they weren't that great, in fact, the Flatbread were kind of mushy. Since the recipe didn't call for those specific flat breads, I am not accounting for that in the rating. next time we will try with a different Flatbread.
