These easy toffee bars are a great dessert for parties, potlucks, and holiday gifts! They have a peanut butter oatmeal cookie crust and lots of melted chocolate and peanut butter chips with a crunchy toffee chip topping.

I don’t think I’ll ever get tired of dessert bars. I mean, you can’t really get tired of them because there are just so many options. I think I probably have enough recipes that I would never have to make the same one twice! Except there are some that I can make over and over again and these toffee bars are at the top of that list.

They’re peanut buttery and chocolatey with little bits of toffee sprinkled over the top. Plus, they’re easy to make (one bowl recipe!) and they’re great for so many occasions – potlucks, parties, holiday gifts, random Friday night Netflix binges. If you need a dessert you can go wrong with peanut butter toffee bars!

Peanut Butter Toffee Bars

These bars are basically toffee bars with peanut butter:

  • A cookie crust made with peanut butter and oatmeal.
  • Chocolate chips and peanut butter chips that are melted on top.
  • Toffee chips spread over the top for a buttery sweet and crunchy finish.

What are Toffee Chips?

Toffee is a hard and brittle candy that is made with butter and sugar that tastes like butterscotch. Toffee chips are just crushed pieces of toffee. You can buy bags of toffee chips in the baking aisle.

How to Make Toffee Bars

I think you’re going to love this recipe because you only need one bowl and once you’ve mixed up the cookie base it’s so simple to pull it all together. To make these bars you will need:

  • Mixer
  • Large bowl
  • 9×13-inch baking dish

Before you start making the bars, prepare your baking dish. Line it with enough foil so you have some extra hanging over the sides. This will make it easy to remove the bars in one piece before you slice them. Spray the foil with cookie spray.

Peanut Butter Cookie Crust

  • Beat butter, sugar, peanut butter, and egg yolk on medium-high speed until smooth. Scrape down the sides of the bowl and then add the flour, oats, and salt and beat on low until just combined.
  • Press the mixture into the prepared baking dish. Make sure it’s pressed into an even layer.
  • Bake the cookie crust for 15 to 20 minutes at 350°F. Be careful to not overbake the crust otherwise it will be too firm and hard once it cools.

Chocolate and Peanut Butter

  • Once the crust is baked, remove it from the oven and immediately sprinkle the chocolate chips and peanut butter chips over the top in an even layer.
  • Place the baking dish back in the oven for about a minute. You only need it in there long enough to melt the chips.
  • Take it back out and spread the melted chips into an even layer.

Toffee Topping

While the chocolate and peanut butter is still hot, sprinkle the toffee chips in an even layer over the top. Gently press them into the melted chocolate and peanut butter, but be careful because it will still be hot.

Place the baking pan on a baking rack and cool the bars for two hours or until the chocolate has hardened. At this point, lift the bars out of the pan using the tin foil and slice them. Store the bars in an airtight container.

Toffee Bars Freeze Great!

Once cooled, slice them and then place them in a freezer-safe container. They will keep will for several months. To thaw, just leave them out at room temperature.

These toffee bars cover so many bases – peanut butter and oatmeal cookie base, rich chocolate and peanut butter and, of course, the crunchy toffee topping. That flavor combo is always a winner!

These are EASY Toffee Bars with peanut butter inside! They have a peanut butter cookie base with a chocolate frosting and lots of toffee bits. These easy bar cookies are perfect for any occasion, especially when you want to ship cookies!

Ingredients

  • 1/2 cup butter softened
  • 1/2 cup peanut butter
  • 3/4 cup packed brown sugar
  • 1 large egg yolk
  • 1 1/2 cups flour
  • 1/2 cup quick oats
  • 1/4 teaspoon salt
  • 3 cups semi-sweet chocolate chips
  • 1 cup toffee bits baking pieces

Instructions

  • Preheat oven to 350°. Line a 9×13” baking dish with foil and spray with cooking spray.

  • Beat butter, sugar, peanut butter, and egg yolk on medium-high speed in an electric mixer until smooth. Scrape down the sides of the bowl. Add the flour, oats, and salt and beat on low until just combined.

  • Press the mixture into the bottom of the prepared pan. Bake 15-20 minutes until the top is golden. (Be careful not to over bake!)

  • Remove the pan from the oven and scatter the chocolate chips evenly over crust. Place pan back in oven for 1 minute. Remove the pan and spread the melting chocolate chips evenly with an offset spatula. Sprinkle the toffee bits evenly over the top and gently press them into place.

  • Set on a rack to cool until the chocolate has hardened, at least 2 hours. Remove from pan using foil. Cut into squares while room temperature. Store in the refrigerator for maximum freshness. (Bars can also be frozen for later use.)
