These smoked almonds taste like the real smokehouse almonds you buy in the store for a huge price. I made these almonds with the help of my smoker and they will be a great treat all year long!

Have you ever had those sweet and salty almonds that are seen at fairs? You can smell those almonds from miles away and that smell makes me so hungry. They smell so damn good.

Another name for smoked almonds is candied nuts and some recipes out there call for cups and cups of sugar. I cut back the amount to only 5 tablespoons and used vanilla and cinnamon to season the almonds. With the help of my smoker, they are even more flavorful. I’ll be snacking on these sweet almonds all Summer long.

Ingredients for Smoked Almonds

  • Lightly Salted Almonds - make sure to get almonds that haven't been heavily salted so that you can control the amount of salt that goes with them
  • Egg whites - The egg whites get beaten until they are frothy. This is what helps the seasonings stick to the almonds.
  • Sugar - brown or white sugar can be used, can also use maple syrup for sweetness
  • Cinnamon and vanilla for some sweet flavor

How to Make Smoked Almonds

Step 1: Set your smoker to the smoke setting and let that run for 5 minutes before turning it to 225 degrees. If your smoker doesn’t have a smoke setting then just set the temperature to 225 degrees. Fill your smoker with wood chips.

Step 2: Weigh out 16 oz of almonds on a food scale and set aside.

Step 3: In a bowl beat the egg whites with a hand mixer until the egg whites are frothy. Add in vanilla and cinnamon and stir in the almonds.

Step 4: Line a baking sheet with tinfoil and spread the almond mixture on top and spread the almonds around on the baking sheet. Sprinkle sugar on top of the almonds and place the sheet pan of almonds on your smoker for 1 to 2 hours.

Variations for Smoked Almonds

Instead of sweet nuts, you can make savory ones. Use seasonings such as garlic powder, rosemary, onion powder, chili powder, and liquid smoke to flavor the nuts if you don’t have a sweet tooth.

Change up the wood chips. Use applewood, maple wood, or pecan wood to make these flavorful almonds. I would not use wood like hickory or oak because those woods are used for smoking meat and are more savory in my opinion. If making savory nuts it is ok to use hickory or oak.

Best Smoking Tips

The smoker is so great for cooking simple basic food like smoked asparagus, smoking bbq ribs for beginners, and easy smoked salmon. The smoke gives the salmon an extra layer of flavor that you wouldn’t get from a grill.

What Smoker do I have? I have had my Traeger smoker for a very long time and I would recommend that brand to anyone wanting to learn how to smoke food. Traegers are kind of pricey but there are some very reasonably priced smokers for under $100.

Some smokers require a preheat before setting the actual temperature to the desired one. Read the instruction manual your smoker came with to make sure.


Wood Chips or Pellets: There are so many different kinds of wood chips to experiment with and you can find them at any hardware store. Places like Target and Wal-Mart also sell them. I’ve even seen wood chips at the grocery stores.

Ingredients

  • 16 oz Lightly Salted Almonds
  • Pecan, Maple, or Apple Wood wood chips
  • 2 Egg whites
  • 2 tsp of Cinnamon
  • 1 tsp of Vanilla
  • 5 tablespoons of white sugar or brown sugar

Instructions

  1. Get your smoker ready. Set your smoker to the smoke setting and let that run for 5 minutes before turning it to 225 degrees. If your smoker doesn’t have a presmoke setting then just set the temperature to 225 degrees. Fill your smoker with wood chips.

Notes

Make sure to mix the egg whites and almonds well before adding them to a lined baking sheet.

Spray the tinfoil to prevent the nuts from sticking.
