Today I have areally simple healthy smoothie ice lolliesrecipe to share with you. This recipe is a great easy recipe for kids to help with and perfect for the gorgeous summer weather we're enjoying at the moment - an ideal cooking project for the summer holidays!

The end of the summer holidays is nearly in sight *sob!* and top of the long list of things I wanted to do this summer was to get my boys in the kitchen as much as possible. I've been semi-successful in that I've managed to get them much more involved with preparing our meals but in the last few weeks of the holidays some extra fun cooking projects are definitely in order and these traffic light lollies certainly fit the bill!

This recipe was made extra easy by using Iceland smoothie mixes. These brilliant mixes are ready prepared, pre-portioned packs of frozen fruit and vegetables, and not only do they make a mean instant smoothie, but they are also perfect for adding tohomemade ice lollies. They cut out the chopping and peeling and let you go straight to the fun and easy bit - whizzing it all upin a blender!

I spotted the smoothie mixes on a recent trip to Iceland and instantly thought of traffic lights - the all natural vibrant green and orange colours just needed a red to make up the set which I soon hunted down in the frozen fruit section - the red fruit juicy berry mix is perfect for adding to smoothies and ice lollies too. I love the fact that both of the smoothie mixes contain vegetables as well as fruit, perfect for boosting their 5 a day!

Ingredients:

Method:

Popthe banana, kale & mango smoothie mix into a blender with a ⅓ of the yogurt and whizz together. If needed, add some milk to loosen the mixture as you blend it. Taste the mixture, and if wanted, add a little honey or maple syrup to sweeten it.

Spoon the mixture into an ice lolly mould. To make multi-coloured lollies, fill each lolly mould to a ⅓ of the way up. For a neatly striped look, clean up any drips inside the mould with a piece of kitchen roll before placing the mould into the freezer. Freeze for ½ hour or so until the mixture is firm enough to hold another layer.

Once you're ready for the next layer, whizz the pineapple, papaya and carrot smoothie mix together with another ⅓ of the yogurt and some milk as before. Taste the mixture and add a little honey or maple syrup to sweeten if needed then spoon into the ice lolly mould to ⅔ of the way up to create the next layer. Return to the freezer until starting to set as before.

Create the final layer by whizzing 150g of the redfruit juicy berry mix with the rest of the yogurt and some milk as before. Taste and sweeten if necessary then spoon in to fill up the rest of the ice lolly mould. Place the lid on and push sticks into the mixture then return to the freezer and freeze for 2-3 hours or overnight until frozen solid.

Serve and enjoy!

Notes: We layered some of our lollies for a fun traffic light effect, but if time is short you can also use this recipe to make ice lollies in individual colours - just follow the recipe above but fill each mould with a single colour instead, skipping the separate freezing of the layers and just making the mixtures up one after the other and freezing them all at the same time. You could also let the kids dollop the different colour mixtures in together at random or how they wish, they will likelyturn out rather messier than the pretty layers but it will be a lot of fun for them!
